Variant A — Classic Mawa Peda (Khoya-based)
Ingredients :
khoya (mawa), grated
sugar (adjust to taste) or powdered sugar
cardamom powder
milk
Chopped pistachios or almonds for garnishing (optional)
Method:
- In a heavy-bottom pan, Add grated khoya and cook gently, stirring continuously until it begins to soften and release a light aroma.
- Add sugar and mix well; continue cooking on low heat until the mixture thickens and begins to pull away from the sides of the pan.
- Mix in cardamom powder and saffron (if using). Add milk a little at a time to achieve a smooth, pliable dough.
- Turn off heat and allow the mixture to cool slightly until it is comfortable to handle.
- Grease your palms with a touch of ghee and shape the dough into small, round pedas.
- Garnish with chopped nuts if desired. Let them set for a few minutes before serving.
Practical tips
- Consistency is key: cook on low heat and stir continuously to prevent burning and to ensure smooth texture.
- For a more fragrant peda, you may lightly crush cardamom seeds and add them to the mixture.
- If you prefer a richer finish, a small amount of saffron milk can be incorporated during the final knead.
- Store in an airtight container at room temperature for 2–3 days, or refrigerate for up to a week. Bring to room temperature before serving.
